Quarantine has left us searching for quick and easy recipes. Especially since we keep eating at 9 or 10pm!
This recipe is simply perfect for those nights where you've only got 30 minutes but, want something filling!
Lemon Pasta Sauce
Ingredients:
1 pound of you pasta of choice
1/4 cup of avocado oil
3 Tablespoons of butter
6 cloves of garlic, mined
1 cup of oat milk
1+ cup of parmesan cheese
Juice of one lemon
salt, pepper, garlic powder
Boil water, add pasta. Meanwhile, begin sauce.
In a pan or pot, heat the butter and avocado oil on low-medium. Add minced garlic. Cook until fragrant. (About 2-3 minutes.)
Add oat milk and lemon juice. Add parmesan cheese.
Add salt, pepper, and garlic powder to taste.
Cook for about 5 minutes. If you prefer a thicker sauce, add a little flour.
Serve over pasta

To make this vegan, switch the butter for a vegan substitute and make your own parmesan. You could also purchase vegan parmesan. In the future, I plan to add some pan seared shrimp! (obviously not vegetarian!)
